Recipe: Sweet Potato Quiche (Gluten Free)

I love spring! It's my favorite time of the year.

The flowers are starting to bloom and all of the veggies I planted in my indoor hydroponic garden are beginning to sprout! And the ocean is starting to call me. So I created a simple, seven-ingredient quiche with no sugary fillers, gluten, or dairy—healthy fuel for the days ahead.

This quiche is a classic dish to bring to a friendly gathering, and it's healthy to boot! Simple and delicious this recipe is packed full of nutrients to keep your taste buds and tummy sated. It’s specifically satisfying for its lightly sweet but crunchy sweet potato crust. Dig in and enjoy the natural sweetness, as this flavorful quiche has low sugar on the glycemic index, so it'll spare you a spike in blood sugar.

By intentionally eating with awareness to what your body needs you’ll be pleasantly surprised how good you’ll feel. Life should be flavorful and delicious but packed full of nutrient-dense foods along the way. Spinach is always a great to throw into any dish because it has the perfect amount of dietary potassium and magnesium for those on the go, whether to a yoga class or festival.


Simple Gluten-Free Sweet Potato Quiche

Ingredients:
1½ cups egg whites
2 cups riced cauliflower
2 cups spinach
2 sweet potatoes, sliced
Tomato, sliced
Zucchini, sliced
1 spritz of avocado oil

Directions:

  1. Preheat oven to 350 degrees.
  2. Lightly spray a pie pan with avocado oil.
  3. Thinly slice 2 sweet potatoes and place in a circular pattern on the bottom the pan.
  4. Place in the oven for 15–20 minutes.
  5. Pull the “crust” out of the oven and start assembling your quiche. Place 2 cups of riced cauliflower on top of the sweet potatoes.
  6. Slowly pour egg whites over the top of the cauliflower and layer the spinach on top.
  7. Gently arrange the sliced tomato and sliced zucchini on the top of your creation.
  8. Return to the oven to bake for 20 minutes.
  9. Voilà! Simple and ready. Serve warm and decorate with edible flowers or strawberries for a little sweetness and flair.
